Anejos Fine Mexican Cuisine: Hawaiian Special
Every once in a while you see something on a menu and think: I want THAT! The Hawaiian Special from Anejos Fine Mexican Cuisine in Waite Park is an easy choice. If the picture didn’t give it away, here are the details. Anejos cuts a pineapple in half, hallows out the fruit and fills it with what would best be described as Chicken Fajitas with a skewer of Shrimp added for good measure. This mix is then covered with Fried Fresh Pineapple, Bacon and White Cheese. It arrives at your table on a pipping hot plate.
Was it good? Of course, it had bacon on it! Could I eat all of it? Not a prayer.
This could easily feed two people. And it arrives at your table with an additional plate of rice, beans, guacamole, sour cream and toppings. Plus the corn or flour tortillas. You eat this like fajitas. We made sure there was a little warm pineapple in every bite, but you can experiment to discover your favorite way to eat the Hawaiian Special.
Bonus Food: Every Mexican restaurant brings you chips and sauce and for the most part they’re all good. This Chips and Sauce combo was exceptional. Great flavor and only a hint of heat. It arrives at your table prior to the meal as with most sit down Mexican restaurants.
